This onion bhaji lunch wrap is packed with bold Indian-inspired flavours and colourful vegetables. Crispy onion bhajis are layered with crunchy salad, vegan cheese and a sweet, fruity chutney, then wrapped in a soft flour tortilla for an easy vegan lunch that's perfect for work Packed Lunches, School Lunches or picnics. Make them with shop-bought bhajis or these Air Fryer Vegetable Bhajis.

💭 How to wrap with lots of filling

These are packed and need to be wrapped tightly. Add the filling to the centre of the wrap, fold the side partially over the filling, pull the bottom over the filling and use it to pull the filling tightly towards you, then roll and cut in half.

Yes, these can be made the night before. Here are a few tips.

  • Dry the grated vegetables and salad leaves well
  • Wrap them tightly
  • Next, wrap tightly in parchment paper (baking paper) or foil

Why is my wrap falling apart?

It's either filled too full, not wrapped tightly enough, or the tortilla wrap is too small to hold the filling.

Why is my wrap soggy?

It could be the grated vegetables or salad were not dried properly, you added too much chutney, or it has been sitting too long.

Why does my wrap taste dry?

You need more mayo or chutney to prevent a dry wrap.

Ingredients
 
 

  • 2 large flour tortillas
  • 2 tablespoon vegan mayo
  • 40 g salad leaves
  • 2 spring onion sliced diagonally
  • 4-6 onion bhajis depending on size
  • 2 tablespoon vegan cheddar grated
  • 1 carrot grated
  • 1-2 large beets cooked or pickled grated
  • 2 tablespoon mango chutney

Instructions
 

Keep screen on
  • Spread each tortilla with mayo.
  • Add a handful of lettuce leaves ¾ way up of each tortilla horizontally, leaving a border.
  • Top both with spring onions and then onion bhajis, horizontally again leaving a good border.
  • Top both with grated vegan cheddar, grated carrot and grated beetroot.
  • Drizzle each with mango chutney, wrap firmly and cut in half.
  • Enjoy!

Notes

  • You can swap the lettuce with kale or spinach.
  • You may use homemade or shop-bought onion bhaji.
  • You can use vegetable pakora instead of onion bhajis.
  • You can chill this wrap for two days, but it doesn't freeze well.
