    This vegan chopped falafel salad sandwich with cheese is a modern & dairy-free twist on a cheese sandwich filler.

    Vegan Chopped Falalfel Salad Sandwich

    Chopped salads are quite the viral trend on Tiktok as well as chopped salad sandwiches like this vegan chopped falafel salad sandwich.

    Of course, most of them are meaty, but I decided to make this one with falafel (homemade falafel or shop-bought), vegan cheese, and salad.

    It's a delicious way of making a salad sandwich.

    💭 What's different about chopped salad sandwiches?

    Chopped salads are nothing new.

    Each ingredient is chopped and added to a large mixing bowl or serving bowl, salad dressing is added and mixed together.

    However, with this style of chopped salad, the sandwich filling is chopped together with the dressing on a chopping board, so there's no need to chop everything individually (and definitely no need for a food processor).

    Effectively you are mixing the filling together while you chop.

    It looks a bit messy, but it tastes great and it's fun to do.

    🥗 Why are chopped salad sandwiches so good?

    Here are some of the reasons I love these sandwich fillers.

    • Everything is chopped together - the filling and dressing
    • Vary the salad ingredients - for what you have
    • Change the dressing- change the dressing or sauce up each time too
    • Tasty - chopped salads are full of flavour
    • Quick - the are quick to make
    • Healthy - they include lots of crunchy veg or salad

    What you need to make falafel chopped salad sandwich filling

    Here are the simple ingredients you need to make this salad and falafel mixture.

    • iceberg lettuce - for crunch
    • red onion - spring onions (scallions) work well too
    • pickled cabbage - try this recipe for quick pickled cabbage (or other Middle Eastern pickles)
    • sundried tomatoes
    • falafel - store-bought falafels or air fryer crispy baked falafels
    • mustard - I like American yellow mustard, but dijon mustard is good too
    • mayo - vegan mayo
    • vegan cheddar - or you could use vegan feta cheese for Mediterranean flavours or a Greek salad
    • salt and black pepper

    🥕 Vegetables you can add to a chopped veg salad

    Here are a few vegetables and salad you could add next time you make a chopped salad sandwich.

    salad tomatoes.
    • Avocado
    • Beetroot - pickled or plain cooked beets
    • Bell peppers - red, orange or yellow pepper
    • Cabbage - or red cabbage
    • Carrot - grated
    • Celery
    • Corn
    • Cucumber - half lengthways and scoop out the wet seeds before chopping
    • Kale
    • Spinach
    • Spring onion - also called scallion or green onions
    • Red onion
    • Tomato - salad tomatoes or cherry tomatoes

    You could add most fresh veggies, but think about a combination of crunchy veggies and softer salad like tomatoes and corn.

    You can also add fresh herbs for extra flavour.

    Try drizzling this easy homemade dairy-free Thousand Island dressing over the filling.

    🍏 Can you add fruit to a chopped salad?

    You can add fruit to a chopped salad like this falafel salad recipe, but choose carefully as not everything will work well.

    Slices of apple or pear would work well, or you could try adding dried fruit for a bit of sweetness.

    Try raisins, currants, or dried cranberries.

    👩🏻‍🍳 Added protein

    This chopped salad sandwich has added plant-based protein from the falafel patties.

    However, you can add extra protein by adding chickpeas (garbanzo beans) and using hummus instead of the mustard.

    You can add cooked chickpeas from a can or crispy roasted chickpeas.

    🥣 Sauces and dressings

    The sauce or dressing is mixed in while the salad is chopped and you can vary it up each time.

    • Creamy tahini sauce
    • Italian dressing
    • Mayo
    • Mustard
    • Pomegranate & lemon dressing
    • Ranch dressing
    • Sriracha

    📖 Variations

    I like to serve this chopped cheese salad sandwich filling on a soft brown bread sandwich or a crusty baguette.

    However, it is also good in a wrap or even heaped onto a baked potato.

    🥪 Storing sandwich filling

    You can store this falafel sandwich filling in an airtight container for a couple of days.

    Try to take it out of the fridge for a while before making the sandwiches, to take the chill off it, it will taste better.

    Of course, if you are making sandwiches for later in the day, go ahead and make them with the filling straight out of the fridge.

    Chopped Falafel Salad Sandwich - Step 1.

    Step 1

    • On a large chopping board add iceberg lettuce and sliced red onion.
    • Next, add pickled red cabbage and sundried tomatoes (both drained and patted dry with kitchen paper to remove any excess vinegar and oil).
    • Then add halved falafel.

    • Now add the the mustard and mayo, then season with salt and pepper.
    • Top with cheese and chop with a sharp knife until you have a fairly finely chopped salad.
    • Spread your bread, baguette or wrap with mustard or mayo, then pile on the chopped salad.

    Ingredients
      

    • 150 g iceberg lettuce (or other crunchy lettuce and more if you like)
    • ¼ red onion (sliced)
    • 2 tablespoons pickled red cabbage (patted dry on kitchen paper)
    • 6 sundried tomatoes (patted dry on kitchen paper)
    • 5 falafel (halved)
    • 2 tablespoons vegan mayo
    • 1 tablespoon American yellow mustard (or dijon mustard)
    • 1 pinch salt and black pepper
    • 2 slices vegan cheddar
    • 6 slices wholemeal bread (spread with extra mayo or mustard - optional)

    • This filling can fill 3-4 sandwiches, wraps or rolls.
    • Store the filling in an airtight container in the fridge for 2-3 days.
    • For best flavour, take the filling out of the fridge a few minutes before you make the sandwiches, to remove the chill from the fridge.
