Preheat your oven to 200°C / Fan 180°C / 400°F / Gas Mark 6.
Line a baking tray with non-stick baking paper.
Pop the garlic bread onto the lined baking sheet and wiggle a knife in each slit, just to expand it a little, without tearing it.
Add a spoonful of pizza sauce (or tomato puree) to each slit.
Cover with a layer of grated cheddar (or mozzarella).
Season the cheese with black pepper, then top with a scattering of the herbs and spices.
Bake until crisp and the cheese has melted.Top with fresh herbs (optional).
Serve and enjoy!
Notes
You can use tomato puree, sundried tomato paste or red pepper paste instead of pizza sauce.
If you are using vegan cheese and you want it more oozy and for it to melt better, mix the grated cheese with some mayo.
Pizza garlic bread is best served freshly made. While it is hot and crisp, with all the buttery sauce and melted cheese. Pop any leftovers in the fridge to eat the next day and it will be tasty for sure, but not quite as lush as when it's freshly baked.
