Vegan Snickers

Vegan Snickers is a healthy version of a Snickers bar made with dates. This easy recipe went viral on Tiktok and they taste amazing!

Ingredients

  • 12 Medjool dates (has to be medjool for that caramel flavour)
  • 9 teaspoons peanut butter (crunchy or smooth and feel free to use a bit more)
  • 2 tablespoons salted peanuts
  • 200 g dark chocolate chips (or dark chocolate broken into chunks)

Instructions

  • Melt the chocolate in the microwave or a bain-marie (see notes below for tips).
  • Roughly chop the peanuts.
  • Cut the dates in half lengthways (not all the way through) and remove the stone.
  • Add a spoonful (probably less than one teaspoon) of peanut butter to each open date and gently squeeze them a little so you have a little stuffed parcel. Peanut butter should still show in a line along the top.
  • Sprinkle chopped nuts over the peanut butter showing at the top of the stuffed dates, for extra crunch.
  • Use two forks (one in each hand) like scoops or a digger scoop to lift the dates (don't prong them, just let them rest in the cradle you have created) and lower them into the melted chocolate, then cover with chocolate.
  • Lift the chocolate covered dates out of the chocolate, stoppping momentarily above the chocolate, to allow excess chocolate to drip through the fork prongs back into the bowl.
  • Place the chocolate-covered dates on the lined baking tray and sprinkle with more nuts.
  • Pop the tray in the fridge to allow the chocolate to set.
  • Try not to eat any until the chocolate has set.
  • Enjoy!

Notes

These Snicker bites are gluten-free.
Melting Chocolate Tips
  • If you are melting the chocolate in the microwave - zap it in quick blasts for between 1-2 minutes.
    • Stir as you go, checking on it, so you don't overcook it.
  • If you are melting the chocolate in a bain-marie - you want a small pot of gently simmering water with a bowl that will sit above it, but will not touch the water (or the chocolate will seize).
    • The steam from the water will melt the chocolate gently. Stir it as it melts.
Storing Snicker Bars
These chocolate bars can be stored in an airtight container in the fridge for up to a week. 
Warning
Some people are allergic to dates, so if you've not tried them before and have an itchy tongue, runny nose or sneezing after eating them, you may have an allergy to them.
It's rare, but it does happen.
If you've eaten them before and were fine, then you don't need to worry.
