An easy recipe for a small batch of the classic vegan Thousand Island salad dressing. Add it to salads, lunch wraps and burgers.

Ingredients

tablespoon
olive oil

tablespoons
vegan mayo
2
tablespoons
tomato ketchup

tablespoon
lemon juice
1
pickled gherkin slice (dill pickles)
(finely chopped)

teaspoon
cayenne pepper

pinch
salt and black pepper
Instructions
Add all the ingredients to a jam jar or other small container with a tight lid.
Shake well to combine and emulsify the salad dressing.
Taste to check the seasoning.
Use to dress salads, wraps and burgers.
Enjoy!
Notes
If you don't have lemon juice, you can use white wine vinegar or apple cider vinegar,
You can use paprika instead of cayenne for a smoky finish.
Keep this salad dressing in the fridge for 1 week.
