Carrot Sandwiches (easy sandwich spread)
Comforting carrot sandwiches made with an easy sandwich spread and topped with plenty of salad for the perfect lunch sandwich.

Carrot sandwich filler
- 2 large carrots (grated)
- 5 tablespoons cheddar (vegan) (grated)
- 3 tablespoons cream cheese (vegan)
- 2 tablespoons yellow American mustard (or dijon mustard)
- 1 tablespoons dried dill (or a handful of fresh dill, chopped)
- 1 teaspoon garlic powder
- 1 pinch salt and pepper
Sandwich ingredients
- 6 slices wholemeal bread
- 6 teaspoons butter (vegan)
- 6 teaspoons salad cream (vegan)
- 50 g salad leaves

In a mixing bowl add the grated carrot, grated cheese and cream cheese.
Make sure the carrots have been dried on kitchen paper and the cream cheese is soft.
Now add the mustard.
Next, add the garlic, herbs and seasoning and mix well.
Taste to check the seasoning and adjust if needed.
This is how I like to make up the sandwiches, but feel free to make them your own way. For each sandwich, butter one slice of bread and spread the other slice with vegan salad cream (or mayo).
Add a generous layer of the carrot sandwich spread to the buttered slice of bread.
Top the sandwich filler with a generous handful of salad leaves, then top with the other slice and cut in half.

- Calories are per finished sandwich. Each portion (3 portions altogether) of carrot spread is just 184 calories.
- After you've grated the carrots, pat them with kitchen paper to remove excess water.
- If the cream cheese is a bit firm, mash it with a fork or the back of a spoon to soften it a bit first before adding it to the mixture.
- This tasty carrot sandwich filling can be kept in the fridge for 3-4 days in an airtight container. Try to take it out of the fridge for a while before making your sandwich (if you are eating it right away) as the chill from the fridge does deaden the flavour.
