I use Cathedral City Plant Cheddar and Violife Vegan Cream Cheese, but you can use your favourite cheeses.

- Mustard - yellow American mustard is good for this filling or a dijon mustard
- Dill - fresh or dried
- Garlic powder
- Salt & pepper

Try to take it out of the fridge for a while before making your sandwich (if you are eating it right away) as the chill from the fridge does deaden the flavour.
If you are making it ahead for lunchtime, it will be perfect by the time you eat it.

- After you've grated the carrots, pat them with kitchen paper to remove excess water.
- If the cream cheese is a bit firm, mash it with a fork or the back of a spoon to soften it a bit first before adding it to the mixture.

Carrot Sandwiches (easy sandwich spread)
Ingredients
Carrot sandwich filler
- 2 large carrots (grated)
- 5 tablespoons cheddar (vegan) (grated)
- 3 tablespoons cream cheese (vegan)
- 2 tablespoons yellow American mustard (or dijon mustard)
- 1 tablespoons dried dill (or a handful of fresh dill, chopped)
- 1 teaspoon garlic powder
- 1 pinch salt and pepper
Sandwich ingredients
- 6 slices wholemeal bread
- 6 teaspoons butter (vegan)
- 6 teaspoons salad cream (vegan)
- 50 g salad leaves

Oh wow. I tried this spread today and it was perfect. a little hint of mustard and it was perfect in my wrap. I didn't pat the carrots dry but it wasn't soggy. I guess because my "cream cheese" was rather firm so maybe any moisture helped loosen it. Having it again tomorrow for wrap number 2!!

This spread sounds good, but it's not vegan if it contains butter, cheddar cheese, and cream cheese. Vegan means made without any animal products, including dairy. Very disappointing to come to a site called "The Vegan Lunchbox" only to discover that the site does not actually cater to vegans.

John it is vegan butter, vegan cheddar and vegan cream cheese. Although it gets a bit boring to have to repeat the vegan part after the first time in a post, as it is assumed with a vegan audience and vegan website. I don't like to treat my readers as if they are daft.
