Types of tofu
There are two main types of tofu. Firm and silken tofu.
Firm tofu is mainly used in savoury dishes where you need a firm texture.
Generally, it needs to be pressed to remove liquid, but if you buy extra firm tofu, it is ready-pressed so you can skip this step and just dab the outside with kitchen paper to absorb any excess liquid from the packet.
Silken tofu has a creamier texture and is the perfect choice when making creamy sauces or desserts.
