USING BAGELS AS A PIZZA BASE
Shop-bought bagels make a great base for pizza.
Just check the ingredients to make sure they are suitable for vegans. Don't assume they will be.
I used sesame bagels, but you could use plain or wholemeal bagels instead.
The secret to the perfect bagel base is to lightly toast it before you add the toppings.
You can grill (or broil) them in the cooker, in a toaster or on a griddle or grill pan.
QUICK PIZZA SAUCE
I used tomato puree flavoured with dried oregano as my pizza sauce. Here are a few more ideas for your pizza.
- Sundried tomato paste
- Tomato puree mixed with paprika
- Tomato puree mixed with chilli powder
- Shop-bought pizza sauce
- Red pesto
- Marinara sauce
- Marmite
VEGAN MOZZARELLA
I use Violife vegan mozzarella, which is pre-grated on these bagel pizzas, but you can use your favourite vegan mozzarella.
You could also swap the vegan mozzarella with vegan cheddar.
Or why not use half and half.
PIZZA TOPPINGS
Bagel pizzas are not huge but you can still pile on the toppings.
Here are a few ideas for topping your bagel pizza.
- Tomato and basil
- Spinach and sundried tomato
- Spinach and pine nuts
- Sauteed mushrooms and parsley
- Sweetcorn
- Tendertem broccoli sauteed in garlic
- Caramelised onion and slices of cooked vegan sausages
- Cherry tomato and pesto
- Roasted red peppers and basil
- Roast vegetables

LUNCH BOX PIZZA
Just wait for the envy when you pull one of these out of your lunch box.
These bagel pizzas are good served hot, but they are also great served cold for lunch.
Serve them as they are or make yourself a side salad to eat with it.
You could also cut it into chunks and serve it with a creamy dip.
For your dip mix some vegan mayo with a little vegan plain yoghurt, some garlic and fresh herbs.

HOW LONG CAN YOU STORE BAGEL PIZZAS?
Once cool, these can be kept in the fridge for 2-3 days and served cold in lunchboxes.
They will lose some crispness, but will still taste good.
CAN YOU FREEZE BAGEL PIZZAS?
Yes you can freeze bagel pizzas.
Freeze them before the final grill (or broil).
Keep them in the freezer for 2-3 months (flash freeze on a tray, then move to a freezer bag).
Oven cook from frozen.

STEP 1
Cut your bagel in half and lightly toast until golden.
This is an important step for the best bagel pizza. You may think it will be cooked at the end anyway, but it is better to toast it first.
STEP 2
Spread each half of your toasted bagel with tomato puree or one of the other sauces suggested above.
Sprinkle with dried oregano or basil.
Top with grated vegan mozzarella (or vegan cheddar).
Season with salt and pepper.
A sprinkle of chilli flakes is also good.
STEP 3
Top with a slice (or a few) of tomato.
Toast (or broil) until the cheese has melted.
Serve with salad and enjoy!
