I call these easy vegan sausage rolls hidden veg sausage rolls, but they are actually a great way of using up whatever bits of veg you have left in your salad drawer or vegetable rack.
An extra benefit is that the veg isn't noticeable so these vegetable rolls are perfect for picky eaters.
These hidden veggie sausage rolls are super easy to make too.

🥦 Which veg works well in sausage rolls?
Here are a few vegetables that you could include in these vegetarian sausage rolls.
- Broccoli - finely chopped
- Carrot - grated
- Cauliflower - grated
- Celery - finely chopped
- Corn - frozen or tinned
- Courgette - grated
- Leeks - finely sliced then chopped
- Mushrooms - finely chopped

- Puff Pastry - I like ready-rolled as it is a perfectly rolled rectangle of pastry
- Celery - you can add spring onion or onion instead

- Ground Cumin

💭 Puff Pastry FAQ
Most shop-bought puff pastry is suitable for vegans, from big brands like Jus-Rol to supermarket own brands.
Look out for any that say 'all butter' on the box or packet as those aren't suitable.
Instead of brushing puff pastry with egg before it is baked, brush it with olive oil or a plant-based milk for a golden finish.
💭 Full-size or mini sausage rolls?
These veggie sausage rolls are mini sausage rolls, well fairly small.
You can make full-size sausage rolls, just cut them into bigger pieces.
If you're making sausages rolls for toddlers or kids, the mini ones are perfect.
However, you should skip the salt, as it's not good for toddlers or young children.
The spices are fine. It's good to broaden their palates with a range of flavours.
🥄 Pastry toppings
A wee sprinkle of seeds looks great on sausage rolls as a finishing touch.
You could use sesame seeds, poppy seeds or nigella seeds.
Sprinkle over the pastry sausage rolls before they are baked, after you have brushed them with oil or milk.
The wet coating will help the seeds to stick.

♨️ Air fryer or oven
These sausage rolls with vegetables can be baked in an air fryer or an oven.
If you are baking them in the oven, they will cook at the same temperature but they will be ready a few minutes earlier than those baked in an oven, so keep an eye on them.
Also, as this recipe makes quite a lot of mini sausage rolls, you will have to air fry them in batches.
If you are oven baking them you can bake them on one big or two smaller trays at the same time.
🥗 Serving hidden veg sausage rolls
These homemade vegan sausage rolls can be served warm or cold.
Serve them cold in lunch boxes with some crunchy veg and hummus (my son likes them with some ketchup for dunking) or for lunch with potato salad (try this dill potato salad, it's rather delicious), cucumber, and tomato.
Alternatively, I like to serve them warm with chips (french fries) and baked beans.
A real family favourite.
🌡️ Storing homemade sausage rolls
Homemade sausage rolls like these vegetable sausage rolls once cool can be stored in an airtight container for 4-5 days.
You can reheat them or serve them cold.
Alternatively, you can freeze them for 3-4 months.
They freeze really well!
Pop them in a freezer bag (you can flash freeze them on a tray first so they don't stick together in the bag) or use non-stick baking paper to separate layers in a freezer tub).
To defrost them, just pop them in the fridge overnight.
👩🏻🍳 Make them for the freezer
You can also make these curried sausage rolls for the freezer or freeze half a batch.
Instead of baking them, flash freeze your uncooked sausage rolls on a tray and store them in a freezer bag or once again store them in a tub with the layers separated with non-stick baking paper.
If there are too many for you to use, you can bake some and freeze the rest unbaked, then bake from frozen.
These kids sausage rolls will go down a treat and not last long.

These step-by-step photos will show you how to make these easy plant-based curry sausage rolls.

Step 1
- Add all the prepared vegetables to a large mixing bowl (full printable recipe below).
- You can vary the veg depending on what you have.
Step 2
- Give it a good mix, then add the drained lentils.
- Next, add the spices and seasoning.
- Then the tomato puree.
Step 3
- Give it a good mix, then blend half or just under half the mixture in a blender or food processor.
- Mix it back into the rest of the veg and lentils still in the bowl.
- Then add the oats.
Step 4
- Mix the oats in. That's your filling ready.
- Take your pastry out of the packet and gently unroll it (if it's a block, roll it into a large rectangle, fairly thin (about ½ cm).
- Cut the pastry in half so you have 2 long rectangular pieces.
- Spoon a quarter of the pastry along the centre or just off centre of each long piece of pastry in a sausage-shaped pile from end to end.
- Rub one long edge of the pastry with a little water, then fold the pastry over the filling and press to seal.
- Use a fork along the sealed edges, then cut into 6 pieces.
- Do this for all 4 rectangles of pastry (2 boxes of ready-rolled puff pastry or 2 blocks) until you have 24 small sausage rolls.

- Place each sausage roll on a lined baking sheet (if baking in the oven).
- Slit each sausage roll a couple of times, to let out the steam.
- Brush each sausage roll with olive oil, the sprinkle over some sesame seeds.

Easy Hidden Veg Sausage Rolls
Ingredients
- 640 g ready-rolled puff pastry (2 x 320g packs, larger is fine too)
- 1 tablespoon olive oil
- 2 stalks celery (chopped)
- 1 courgette (zucchini) (coarsley grated and squeezed in kitchen paper to remove excess liquid)
- 2 large carrots (peeled and coarsely grated)
- 2 large mushrooms (finely chopped or 4 closed caped or chestnut mushrooms)
- 236 g tinned green lentils (390g/140z can, drained)
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon chilli powder (optional)
- 2 tablespoons tomato puree
- 12 tablespoons oats
- ½ teaspoon salt and pepper (skip the salt for toddlers and young children)
Instructions
- Preheat the oven to 200c / 180c fan / 400f / gas mark 6 and line one or two oven trays.

- Bake them in the oven or an air fryer, they will bake quicker in an air fryer, so keep an eye on them.
- Once cool they can be stored in an airtight container for 4-5 days. You can reheat them or serve them cold. Alternatively, you can freeze them for 3-4 months.
- You can freeze half or more of the batch before they are baked. Freeze them in a tub, the layers separated by non-stick baking paper or flash freeze them on a tray, then move into a freezer bag so they don't stick together.#
