π What is a Danish pastry?
A Danish pastry is a lamenated layered sweet pastry.
Brought to Denmark by Austrian bakers during strikes in the 1850s, then tweaked to suit the Danish palate, they are still popular in Denmark and across the world.
π©π»βπ³ Cheats Danish pastries
Danish pastries are made with yeast leavened dough and are quite labour intensive to make.
These cheats Danish pastries are made with ready made pastry and still have the crumbly layers, but are much quicker to make.
They are still totally luxurious and delicious.
π Which Pastry?
These vegan apple Danish are made with puff pastry.
You can use a block of puff pastry and roll it yourself or use ready-rolled puff pastry.
Of course, the ready rolled is much easier to use, but it's up to you which you use.
π Is puff pastry vegan?
Most puff pastry is suitable for vegans.
They are one of those porducts that are accidentally vegan as it's cheaper for the brands to use a margarine to make them instead of butter.
Just watch out for any that have butter in the name, as they won't be suitable for vegans.
β¨οΈ Baking puff pastry in the air fryer
Puff pastry is usually baked in the oven, but it can be baked in the air fryer too.
I don't think you get quite the same rise in the pastry, but it's still good.
The secret is to preheat the air fryer for a few minutes before you add your pastry.
π Apples or apple sauce?
I make these apple pie Danish with apple sauce.
You can use shop-bought apple sauce or make your own homemade apple sauce.
Alternatively, you could add slices of apple in these apple pie pastries, as well as or instead of the apple sauce.
Just make sure your cut them into thin slices as you have to be able to roll them in the pastry.

π₯§ Is apple crumble the same as apple crisp?
Crumble and crisp are pretty much the same thing.
A fruit filling with a crumbly, buttery, sugar topping.
π₯£ Apple crumble topping
The vegan crumble topping is added as a filling in these apple crumble pies.
It gives that wonderful buttery toffee flavour that a crumble topping has.
Which works wonderfully with the apple filling.
π₯ Adding oats
Scottish apple crumble, in fact any Scottish fruit crumble usually include oats in the crumble topping.
Oats is one of our core crops, so we add it into so many dishes and bakes.
I've included oats into the crumble topping that's added into these apple crumble pies.

π Recipe
Vegan Apple Crumble Danish Pastries
Ingredients
- 5 tablespoons plain flour
- 5 tablespoons oats (porridge or rolled oats)
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon (more if you like)
- 1 pinch salt
- 2 tablespoons vegan butter (cubed or spread)
- 375 g puff pastry (I prefer ready rolled, but you can roll out a block of pastry)
- 200 g apple sauce
- 2 tablespoons brown sugar (for sprinkling
- 7 tablespoons icing sugar (confectioners sugar)
- 2 teaspoons water (a little more if you need it but try to work this in well first)
Instructions
- Preheat the oven to 180c/160c fan/350f/gas mark 4. If you are using an air fryer you only need to preheat it for a couple of minutes before baking at the same temperature.
- Add flour, oats, brown sugar, cinnamon and salt to a large mixing bowl and mix well to combine.
- Add the butter and rub in with your fingertips until you have a breadcrumb like texture.
- Unroll the pastry (or roll our your block of pastry into a rectangle).
- Spread with the apple sauce, leaving a border clear at the top and bottom of it landscape (lengthways).
- Sprinkle the crumble over the apple sauce.
- Roll the long side from the bottom to the top, rubbing a little water along the top border to help it seal. You will be left with a long sausage shape.
- Cut slices of the pastry about 1 cm thick, a little thicker is ok.
- Place the swirls on non-stick baking paper, leaving a space between them. If you are baking in an air fryer with shelves, if they are mesh, you can coat with a little spray oil to avoid sticking and place directly onto the mesh shelves.
- Preheat your air fryer for a couple of minutes to 180c or 350f, if you are baking in an air fryer.
- Bake the Danish pastry swirls for 15 to 20 minutes. If you are baking on baking paper, you might want to turn them once the top is golden, then give the other side a bake for a few minutes. If they are straight onto a mesh shelf, you may not need to turn them.
- Leave them to cool completely until cool, then make the icing sugar.
- Mix the icing sugar with the water until you have a thick icing, then drizzle over the cooled pastries.
- Enjoy!
Notes
- Walnuts - chopped finely and added to the crumble mix
- Apple slices - use a potato peeler to peel thin slices of apple to add to the Danish pasties
- Toffee sauce - add a layer of dairy-free toffee sauce
- Cherries - use cherry pie filling instead of apple sauce
