🌡️ Is it hot?
Well, it depends on how much heat you like.
I thought it was quite spicy (I'm definitely a wuss when it comes to heat), but my husband thought it was the perfect heat with a good taste of spice.
If you want a bit less heat, you could add just half the sriracha.
Love heat? Feel free to add more.
🌶 What is sriracha?
Sriracha is a hot sauce often served with Thai food.
It's our favourite hot sauce.
Sometimes called Rooster sauce, sriracha is made to a secret recipe from jalapenos, garlic, sugar, and vinegar.
Not quite as hot as many hot sauces, so a good all-rounder.
🍜 Vegan noodles
The best noodles for this dish are straight-to-wok noodles.
Pre-cooked, so you're really just heating them through for a super quick meal.
I buy Tesco own brand which are medium wheat flour noodles and suitable for vegans.

🥕 Quick vegetables
When I say quick vegetables, I wanted veg that didn't need to be cooked, as I wanted this dish fast.
Grated carrots were added to the noodles in the pan to warm through and I added chopped spring onions (scallions or green onions) to serve.
🥬 Which other vegetables could you add?
Here are some ideas of other vegetables you could add to this fast noodle dish.
- Bell pepper (red, orange, yellow or green) - finely shredded
- Corn - tinned or frozen
- Kale - finely shredded
- Red onion - finely sliced (it will still have a bit of crunch)
- Spinach - just throw a handful straight in
- Spring greens (spring cabbage) - finely shredded
📋 What you need to make quick sriracha noodles
Here are the simple ingredients you need to make these 5 minute vegan noodles.
- Straight to wok noodles - make sure they are vegan
- Sriracha - or other hot sauce
- Soy sauce
- Lemon juice - freshly squeezed
- Carrot
- Spring onions
- Cashews - plain or salted
- Sesame seeds

🥜 Toppings
Spring onions, cashews and sesame seeds were my toppings of choice, but here are a few more ideas for topping your quick noodles.
- Flax seeds - also known as linseeds (it's cheaper to buy them under the name linseeds)
- Fresh coriander
- Jalapeno - thin slices
- Pesto - a bit of an unusual choice, but a drizzle will add an amazing pop of flavour
- Salted peanuts - roughly chopped
⏲️ Does it really just take 5 minutes?
Yep, it's super quick!
The carrot wasn't even peeled before grating and the noodles and sauce only take a few minutes to warm through.
While it's warming through, you can chop the spring onions.
One of the quickest lunches you can make and much healthier and so much more flavour than a shop-bought pot noodle.
💭 How long will it keep?
This is pretty much an instant dish, so you make when you want it.
I made enough one-pot noodles for two people, but the straight-to-wok noodles come with two sachets of noodles, so you could half the recipe if you're making it for yourself and don't want to store leftovers.
If you want to take it to work, you could make it ahead, remove it from the pan to cool, then pop it in the fridge to take to work the next day.
It could be eaten cold, or if you have a microwave at work, you could heat it.
Alternatively, you could take it to work in a food flask which will keep it warm until lunchtime.

👩🏻🍳 How to make 5 minute vegan sriracha noodles

Step 1
- Add the sriracha, soy sauce, lemon juice and peanut butter to the pan.
- Add water to thin down the sauce and stir to combine and allow to warm through.
- While it's warming, grate your carrot and chop your spring onion.
Step 2
- Add the carrot and mix through, then add the noodles and some more water as the sauce will thicken.
Step 3
- Mix until well combined and allow to warm through.
- Serve in a bowl, topped with spring onion, cashews and sesame seeds.

5 Minute Sriracha Noodles
Ingredients
- 4 tablespoons peanut butter (crunchy or smooth)
- 2 tablespoons sriracha hot sauce
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 9 tablespoons water
- 300 g straight-to-wok noodles (make sure they are vegan)
- 1 large carrot (grated)
- 3 spring onions (scallions/green onions) finely chopped
- 50 g cashews (plain or salted)
- 1 teaspoon sesame seeds
Instructions
- Add the peanut butter, sriracha, soy sauce, lemon juice and 6 tablespoons of water to a pan and warm through.
- While this is warming, grate a large carrot and finely chop 3 spring onions.
- Add the carrot to the pan and stir to coat well, then add the noodles, another 3 tablespoons of water and mix well.
- Cook for another couple of minutes to heat through at a fairly high heat.
- Serve in a bowl, topped with spring onions, cashews and sesame seeds.
- Enjoy!

Just made this for lunch. Added finely sliced red pepper and mushrooms - was going to add broccoli but it needs longer to cook so left it out. Super delicious and great that you can vary the ingredients. A go-to easy lunch for someone who doesn’t like sandwiches!
