Easy pickled radishes are quick refrigerator pickles that perk up so many meals. Add them to tacos, wraps, Vietnamese banh mi, or curries.

I love quick fridge pickles like these easy pickled radishes, which are a big favourite in Korean street food.

They are so simple to make, and in no time at all, you have a tasty pickle that can be added to so many dishes.

Make a batch and you'll find they never last long.

They are so, so tasty and added veg too, tick!

⏲️ Quick pickles

There are three simple steps to quick pickles, so let's de-mystify them.

  1. Thinly slice your veg and pack it into a sterilised jam jar or mason jar with any spices you are adding.
  2. Pour in your heated vinegar mixture, right to the top of the jar, and add the lid.
  3. Leave to cool to room temperature, then pop the jar of pickles in the fridge for a few hours or overnight. This will give the flavours time to develop.

There you go, simples!

And I will talk you through sterilising the jars, which is also easy.

💭 The easy way to sterilise jam jars

The traditional way to sterilise jam jars is to wash the jam jar and lid in hot soapy water, then put it in a hot oven to dry and heat through.

However, there is another way to sterilise them.

If you have a dishwasher, you can just run the jam jar or mason jar and lid through a normal dishwasher cycle with other dishes.

The trick when jarring pickles is to fill the jar with the hot liquid while the jar is still hot, being careful not to touch the inside of the jar or lid with your fingers (as that could add bacteria).

🍶 Different types of vinegar

When making quick pickles, you can use a variety of different vinegars.

Usually, the best choice is either white wine vinegar, red wine vinegar, or apple cider vinegar.

I find malt vinegar a bit too harsh, and this really isn't the job for balsamic vinegar, which is too sweet.

Some people use rice vinegar, which is milder, but I haven't tried that yet.

🥄 Add a bit of sweetness

The vinegar pickling liquid needs some balance, so you need to add some sweetness for that sweet and sour finish.

You can add sugar, but I quite like to add maple syrup.

Either works well.

📋 What you need to make quick pickled radish

Here are the simple ingredients you need for this quick pickled radish recipe.

  • Radishes - finely sliced
  • Vinegar - I like to use white wine vinegar
  • Maple syrup - or sugar
  • Za'atar - a Middle Eastern herb and spice blend, that has a citrussy herby flavour (if you can't find it, add lemon zest, oregano, and a pinch of paprika)
  • Salt - to season it

🥄 Other flavourings you can add to pickles

Here are a few different flavours you can add to your pickling liquid.

clove of garlic
  • Fresh garlic
  • Black peppercorns
  • Mustard seeds
  • Fennel seeds
  • Coriander seeds
  • Cumin seeds
  • Bay leaves

I'm sure you can think of a few others. Choose what you think will go well with your quick fridge pickles.

🌮 Serving quick pickles

I find that when I make a jar of fast pickles, they never last long.

  • to your sandwich filling
  • in wraps
  • with your curry for a zing of flavour
  • to burgers
  • and hot hogs
  • on top of salads
  • in tacos
  • on crackers or oatcakes with cream cheese
  • in a Vietnamese bahn mi with this gorgeous tofu bacon

Basically, throw these quick pickled radishes on everything!

Step 1

  • Sterlise your jam jar (see notes above or recipe card below).
  • While your jam jar is sterilising, wash and finely slice your radishes. it will take a while.
  • Next, make your flavoured vinegar liquid and heat in a pot or in the microwave.
