I do love a freshly made dressed salad, but I also like a hearty potato salad or coleslaw when I'm making a work lunch or preparing a summer picnic.

Everyone needs a sweet treat now and again, be that a square of dark chocolate, some sweet summer berries or some homemade cakes and no-bake treats.
Here are a few of my favourites to round off your lunch or to serve with a cuppa in the afternoon, although I have to admit, I'm making my Quick Microwave Jam Flapjacks a lot too, especially for my son's lunchbox.
More Vegan Bakes, Cakes and No-Bakes
A vegan packed lunch can include a wide variety of foods such as sandwiches, wraps, salads, pasta salads, hummus with veg sticks, falafel, fruit, nuts, and homemade snacks like flapjacks or muffins. The best packed lunches usually include a mix of carbohydrates, protein and healthy fats to keep you full and energised throughout the day.
To keep vegan packed lunches fresh, store them in an airtight lunchbox and keep them chilled with an ice pack if needed. Ingredients like crisp vegetables, sturdy breads, and thicker dressings work better than watery fillings. If you're making lunches ahead, store wet ingredients separately where possible and assemble just before eating. Remember to pack a paper napkin.
High-protein vegan packed lunches include tofu wraps (like this Tikka Tofu & Chickpea Wrap), Chickpea Sandwiches, lentil salads (try this Lentil Couscous Salad), bean burritos, falafel boxes, and quinoa salads with beans or chickpeas. Adding ingredients like hummus, seeds, or nuts can also help increase protein content and make the meal more filling.
Mix and match these recipes to create vegan packed lunches that are satisfying, nutritious and easy to take with you.
