Creamy Vegan Dill Potato Salad (Easy BBQ & Picnic Recipe)

This creamy vegan dill potato salad is fresh, herby and packed with flavour. Made with tender baby potatoes, plenty of fresh dill, spring onions and vegan mayo, it's the perfect side dish for BBQs, picnics, summer lunches, buffet tables and Packed Lunches.

Easy to make ahead, and it tastes even better after a few hours in the fridge; it's a recipe you will make again and again, and if you like the added dill, also try my Dill Carrot Coleslaw.

I first tried dill potato salad when I was a student. There was a local deli where I would pick up a cup of soup and a small tub of potato salad for lunch.

It was the most amazing potato salad I have ever tasted. When I asked what the secret was, they said lots of fresh dill, so I've made my potato salad like that ever since. I know you will love it too!

📋 What you Need to Make Dill Potato Salad

This winning potato salad is made with just a few simple ingredients.

  • Potatoes - use a waxy potato like new potatoes and leave the skin on
  • Mayo - I sometimes change things up and add finely grated fresh garlic to my mayo (I like Hellman's Vegan Mayo) for this salad
  • Spring onions - are also called green onions or scallions, you can also add thinly sliced red onions

💭 Why add Fresh Dill to Potato Salad?

Dill, also known as dill weed, is actually part of the celery family, and it brings lots of flavour to any salad. Here's why you should add it:

  • Fresh flavour
  • Complements the potatoes perfectly
  • Balances the creamy mayo
  • Classic Scandinavian and European pairing
  • Makes the salad taste lighter

💭 Can I use Dried Dill?

Yes, you can use dried dill. Fresh dill is better, but if I run out, I often use dried dill. The mayo helps dehydrate and soften the dried dill. It's a good standby option.

🥔 Which Potatoes are Best in Potato Salad?

It's a personal preference, but I prefer using baby potatoes, which are waxy potatoes, which keep their firmness when cooked for potato salad. You can use starchy potatoes, but they are more fluffy and more likely to fall apart. It depends on the qualities you are looking for.

🥔 Keep the Skins on!

Don't peel the potatoes when making potato salad as most of the nutrients are in the skin, so it's crazy to peel them. Just give them a good wash, The salad will look more rustic and appealing too!

Making Dill Potato Salad - Step 1 - cook and cool the potatoes.
  1. Step 1: Cut the washed potatoes in halves or quarters depending on the size and boil or steam them until tender.

  1. Step 2: Leave the drained potatoes in a colander to steam dry and prepare the rest of the ingredients. Add the chopped spring onions to a mixing bowl.

👩🏻‍🍳 The Secret to the Best Potato Salad

  • Choose waxy potatoes because they hold their shape
  • Dry the potatoes well after cooking so the dressing clings to them
  • Season well - potatoes need lots of seasoning with salt and black pepper
  • Be generous with the fresh dill - it will transform a standard potato salad into something fragrant and memorable
  • Chill the potato salad before serving to give the flavours time to develop
  • Bring to room temperature to take the chill off and get the most flavour

Can I make potato salad ahead?

Yes, and the flavours develop and make the potato salad taste even better.

Why is my potato salad watery?

If the potatoes weren't left to steam completely dry or dried well with a tea towel, they will add moisture to the potato salad.

Why are my potatoes falling apart?

There are 3 reasons potatoes could break up, the first is using a starchy potato, which is softer and tends to break, the second is the potatoes were not cold when you made the salad and the third could be mixing the salad to enthusiastically.

Why doesn't it have much flavour?

It might need more onion, salt or dill. A squeeze of lemon juice will also perk it up.

A simple potato salad with lots of fresh dill for an incredibly tasty side salad to add to your lunch.

Ingredients
 
 

  • 500 g baby potatoes (or other waxy potatoes), cut into chunks
  • 6 spring onions sliced
  • 20 g fresh dill chopped
  • pinch salt and pepper
  • 4-5 tablespoon vegan mayo

Instructions
 

Keep screen on
  • Once your potatoes are steam or boiled until tender and rinsed until cold, pat them dry with kitchen paper and pour them into a large bowl.
  • Add the chopped spring onions and dill.
  • Add the mayo and season with salt and pepper.
  • Mix well and taste to see if it needs more salt or pepper.
  • Serve and enjoy!

Notes

  • You can keep this potato salad in the fridge for 3-4 days.
  • Potato salad can be frozen in a freezer bag or airtight container for 2-3 months. To defrost it, leave it in the fridge overnight and give it a good stir before serving.
