My name is Jacqueline, but you can call me Jac.
Here at the lunchbox, I share easy plant-based lunch recipes with simple ingredients you probably have in your kitchen.

My philosophy is that vegan food should be effortless to make and doesn't need a hundred weird ingredients.
Don't get me wrong, I am happy to take the odd shortcut, but I do think homemade is best.
For instance, my easy homemade pepperoni is made with a few basic ingredients, but the supermarket version also includes firming agents, stabilisers, and preservatives (as well as palm oil).
What You Will Find in The Vegan Lunchbox
- Easy and tasty lunch recipes anyone can enjoy (check out my recipe index).
- All recipes are tested on my family and friends before I share them with you.
- None of the recipes or recipe photos are AI-generated, although I do share AI buttons if you want to summarize and save my recipes for later.
- The recipes are suitable for vegan and dairy-free diets, or for anyone wanting to eat more plant-based food. Many are gluten-free or can be made gluten-free with a simple swap.
- All recipes have a handy at-a-glance box (top of the page) with a brief overview of the recipe, ingredients, servings, and how long it takes to make.
- A convenient jump-to-recipe button (if you are in a rush), and the recipe cards can be printed or saved as a PDF
Being a Recipe Creator
Over the years, I've created and photographed recipes for top food brands, including M&S, Waitrose, Riso Gallo, Napolina, Crockpot & Quorn.
I was a writer for online magazines Baby Centre, Reader's Digest, and Great British Chefs.
And I had a column called Veg on Wheels in Vegan Life Magazine (now Plantbased), where I shared ideas for seasonal produce, which was so fun!

Oh, and did I tell you I have a kids' book (co-authored with Clive Gifford), called Living on the Veg, which is a children's guide to living meat-free?
My Facebook community is also called Living on the Veg. It's a great place to hang out, and everyone is really friendly, do join us!
