This easy vegan carrot and dill coleslaw is crunchy, creamy and packed with fresh flavours. Made with grated carrot, crisp white cabbage, red onion and lots of fresh dill, it's ready in just 10 minutes and makes a delicious side dish for BBQs, Vegan Picnics and summer lunches.

- Cabbage - if you don't have white cabbage you can use red, but it does have a stronger flavour
- Onion - you can use white onion instead of red onion if that's what you have
- Herbs - fresh herbs are best, but you can use dried herbs

- Different herbs - if you don't like the flavour of dill, or don't have any, you can use chives instead
- More colour - add finely sliced red pepper makes a good addition to the slaw, adding colour and flavour
- More tang - mix some vegan salad cream or mustard into the mayo for a pop of extra flavour
- More crunch - add finely chopped apple or toasted sunflower seeds
- Add heat - add chilli flakes (red pepper flakes) or finely chopped jalapeno

Step 1 - Add the shredded cabbage and finely sliced red onion to a mixing bowl.

How to Make Sure your Coleslaw is Crunchy
The key to crunchy coleslaw is keeping excess moisture out of the slaw. Once you have shredded your cabbage, wash it and dry it thoroughly. Grated carrots can also release quite a lot of moisture, so pat them dry with kitchen roll (kitchen paper).
Don't add the dressing until you are ready to mix everything together, to prevent it becoming watery.

⏲️ How Long does Vegan Coleslaw Keep?
Once made, store carrot and dill coleslaw in an airtight container in the fridge and use in 2-3 days while it's at its best, but do give it a good stir before serving as the dressing will settle at the bottom of the bowl.
I don't recommend freezing as the vegetables will lose their crisp texture and the dressing can separate.
FAQs
The vegetables weren't well dried, or the dressing was added too soon before serving.
Use less mayonnaise and think about adding a little lemon juice or white vinegar.
Colelaw needs a lot of seasoning with salt and pepper, and you can't go wrong adding extra herbs.
Yes, if you can't get hold of fresh dill, dried dill will work well in the creamy dressing.
This slaw is particularly good served with burgers, sausages, falafel, toasties, sandwiches, wraps or a baked potato.

Vegan Carrot & Dill Coleslaw
Ingredients
- 1 large carrot or 2 smaller carrots
- ¼ white cabbage
- 1 small red onion
- handful fresh dill
- handful fresh parsley
- 10 tablespoon vegan mayo
- a good grinding of salt and pepper
Instructions
- Slice, then chop the cabbage, grate the carrot on the large grate section of your grater and half then finely slice the red onion.
- Add the prepped vegetables into a mixing bowl.
- Chop the fresh herbs and add them to the vegetables.
- Add the vegan mayo and season with salt and pepper.
- Mix well, then taste to see if it needs more seasoning or mayo. depending on how you like it.
- If you don't taste the dill enough, you can add more. It adds a beautiful flavour to the slaw.
- Enjoy!
Notes
Coleslaw Making Tips
- If you are rinsing the cabbage before shredding it, make sure it is dry or the mayo dressing will become watery. Shake the water off and then dry with a clean tea towel.
- Dab the grated carrot with kitchen paper to dry it off too.
- Always add fresh herbs and not dry herbs for the best flavour.
- Use a good quality vegan mayo.
- Don't forget to season the coleslaw well with salt and pepper.
- Serve at room temperature. It has little flavour when it's just out of the fridge.
- Give it a good stir to redistribute the dressing before serving.
