Easy vegan halloumi & spinach borek. A twist on Turkish filo parcels, which are perfect for lunch.
Here's what you need:
* Filo pastry & spray oil
* Vegan halloumi & feta
* Vegan mayo
* Spinach & spring onions
* Nutritional yeast -
* Nutmeg & chilli powder
* Salt & pepper
Wilt spinach under hot water in a colander.
Rinse in cold water. Squeeze out as much water as possible.
Grate the cheese, then add all the ingredients except for pastry, oil and seeds to a bowl.
Right, that's your filling made.
Unwrap the filo pastry and cut in half lengthways. Wrap the pastry in a damp tea towel.
Take one sheet of pastry, spray with a little oil and top with another layer of pastry.
Place a sausage-shape of filling near the bottom.
Fold the sides over the filling and start to roll up to a sausage shape, give the top a spray of oil before finishing to seal.
Do this with the rest of the filling & pastry, then place on a lined baking sheet.
Spray with oil & sprinkle poppy seeds.
Bake until crisp and golden.
Serve with salad and some sweet chilli sauce.
