There's nothing better than golden, flaky puff pastry straight out of the oven.

That's why Greggs vegan sausage rolls are so popular.

Their filling isn't all that tasty but the warm pastry, oh yeah baby!

I'm taking them up a level with a yummy spiced chickpea filling that's super easy to make and full of protein.

You really have to try these chickpea sausage rolls!

👩🏻‍🍳 Vegan sausage rolls

Vegan sausage rolls come in such a variety of flavours, they are so much more interesting than the sausage rolls your regular meat-eater chomps.

Easy Vegan Sausage Rolls.

Some are vegetable based, some are made with pulses and some include nuts in their filling, and they are all delicious. The fillings are definitely more healthy, that's for sure.

Talking about vegan sausage rolls, have you tried my mushroom and chestnut sausage rolls, these easy hidden veg sausage rolls that are great for kids or picky eaters. my red lentil sausage rolls that taste like dahl or my spicy lentil sausage rolls?

I even make sausage rolls out of leftover bolognese.

👩🏻‍🍳 What you need to make chickpea sausage rolls

Here are the simple ingredients you need to make these easy vegan sausage rolls.

  • Puff pastry - a block or ready rolled
  • Chickpeas - canned chickpeas or dried chickpeas soaked overnight and cooked
  • Sundried tomatoes - and some of the oil from the jar which is packed with flavour
  • Oats - to add to the texture
  • Nutritional yeast - (also known as nooch) for that savoury flavour and a Vitamin B12 boost
  • Paprika
  • Chilli powder
  • Dill - fresh or dried
  • Salt & pepper
  • Olive oil
  • Sesame seeds

🌶 How spicy are they?

These spicy sausage rolls are more spiced than hot.

Spicy Chickpea Pastries.

It's more about the flavour, but you can add more chilli or a hot chilli powder if you prefer more heat.

📖 Variations

Here are a few tweaks you can make to these sausage rolls to use what you have in your store cupboard or larder.

  • Cannellini beans - you can use another white bean instead of chickpeas
  • Cayenne pepper - you can use cayenne pepper instead of chilli
  • Hot chilli powder - make them as spicy as you like
  • Oregano - you could use oregano instead of dill
  • Black onion seeds - the sesame seeds are used to decorate the sausage rolls, but you can use different seeds or skip them

💭 Is puff pastry suitable for vegans?

Supermarket puff pastry is usually suitable for vegans.

ready rolled puff pastry.

From supermarket own brands to big well know brands like Jus-Rol.

Of course, they are accidentally vegan as they are using a cheaper product than butter, but still a win for us.

Just watch out for any pastry that says 'all butter'.

If you're not sure, check the ingredients.

💭 Block or ready-rolled puff pastry?

I prefer ready-rolled puff pastry as my rolling skills are not fabulous and the ready-rolled stuff is very even and the perfect rectangle, so ready to go.

However, I have noticed if you roll out a block of pastry, when it's baked, you do get a better rise.

You can decide which you use.

💭 Can you make these veggie sausage rolls gluten-free?

It's super easy to make these delicious chickpea sausage rolls gluten-free.

Just swap the puff pastry with gluten-free pastry.

Either shop bought or homemade.

Here's a recipe for gluten-free puff pastry from Coeliac UK if you fancy having a go at making your own.

👩🏻‍🍳 How to get golden puff pastry without an egg wash

Don't despair, you can get a golden finish to puff pastry without using an egg wash.

Spicy chickpea sausage rolls.

You can brush them with plant-based milk, just whichever type you regularly buy.

My method of choice is to brush the pastry with olive oil which gives a really golden finish.

Here are a few chickpea facts that might be helpful.

Do chickpeas have another name?

Chickpeas are also known as garbanzo beans which comes from the Spanish name for these creamy legumes.

Are canned or dried chickpeas better?

Both are packed with protein and nutrients, but dried chickpeas are cheaper to buy. However, you need to use dried chickpeas within a year of buying them and you have to factor in the extra time to soak and cook them. Canned chickpeas are much more convenient and ready to use.

How to cook dried chickpeas?

1. Soak them in plenty of cold water overnight.
2. Drain the chickpeas and pour them into a pan, adding fresh water to double the volume of chickpeas.
3. Bring to the boil, then reduce to a simmer and cook for between 50 minutes and one hour until soft and tender.

What to do with chickpea water?

Don't pour the water from a can of chickpeas down the drain. This nutritionally packed water, also called aquafaba can be used to make many desserts including chocolate mousse and egg-free meringues.

  • Dunked - dunk them in ketchup
  • Chippies - with chips (french fries) and baked beans
  • Mash - with mash and baked beans or peas
  • Buffet - as part of a help-yourself buffet or picnic

🌡️ Storing spicy chickpea sausage rolls

Wrap the sausage rolls in either baking paper or kitchen paper and store in an airtight container in the fridge for up to 5 days.

You can reheat them or serve them cold.

To freeze, make them but instead of baking them, either flash freeze them on a tray and pop in a freezer bag or wrap each one in freezer-friendly baking paper and pop in a freezer bag or tub.

Leave in the fridge overnight to defrost.

Step 1

  • To a food processor or blender jug add the cooked/canned chickpeas and red onions.
  • Now add the sundried tomatoes and oil, then blend. It can be quite a coarse blend.

  • Spoon the coarse chickpea mixture to a mixing bowl.
  • Add the nutritional yeast (nooch), oats and herbs (see recipe below for full ingredient list).

Step 3

  • Next, add the spices (you can make the mixture spicier if you like), then season with salt and pepper.
  • Mix well to combine.

Step 4

  • Unroll (or roll if you bought a block of pastry) your puff pastry.
  • You can leave it on the paper it is wrapped in to bake or move it onto another piece of non-stick baking paper.
  • Cut the pastry down the middle lengthways, so you have two long strips.
  • Spread the filling in a sausage shape down the middle of both strips of pastry.
  • Dampen one long edge of pastry with water and pull over the filling and press it down on the other edge of pastry, so the filling is encased.
  • Use a fork to press down and seal all along the edge where the pastry is joined, leaving a pattern all along the edge.

  • Cut each long sausage roll shape into 4 pieces and cut 3 diagonal slits in the top of each sausage roll to let the steam escape.
  • Brush each one with olive oil, then sprinkle with sesame seeds.
  • Bake until golden.

  • 375 g puff pastry (ready-rolled or a block)
  • 240 g chickpeas (400g can drained)
  • ½ red onion (quartered or cut into chunks)
  • 5 sundried tomatoes
  • 2 teaspoons oil (from the sundried tomatoes jar)
  • 3 tablespoons nutritional yeast (nooch)
  • 3 tablespoons oats (porridge or rolled oats)
  • 1 tablespoon paprika
  • 1 tablespoon dried dill
  • 1 ½ teaspoons chilli powder (more if you like)
  • 1 pinch salt and pepper

  • 2 teaspoons olive oil
  • 1 teaspoon sesame seeds

  • Preheat the oven to 180c/160c fan/350f/gas mark 4. You can use an air fryer instead, but you won't have to preheat it until they are almost ready to bake as it heats quickly.

      I just made this and loved how easy it was to make! I gave it a 4 only because it was more of a filling than a sausage but still good. I think I will replace the Oatmeal with vital wheat gluten next time :-). Thanks for the recipe.
