I've been making all sorts of quick soups in it to take with me to work for lunch.
Today's soup is a creamy cauliflower and fennel soup flavoured with dill.
It's absolutely gorgeous and super easy to make.

⭐ Why you will love this plant-based creamy cauliflower soup
Here are a few reasons why you need to make this simple soup.
- Very quick to make - a few minutes to chuck all the ingredients and 20 minutes to cook (soup makers usually take between 20-25 minutes to cook and blend your soup)

📋 What you need to make this cauliflower fennel soup
These are the simple ingredients you need to make this luscious soup, which has such a creamy consistency.
- Cauliflower
- Fennel root - fennel bulb
- Cloves of garlic
- Ground cumin - for warmth
- Dried dill - or fresh dill
- Plant cream - or vegan heavy cream
- Vegetable stock cubes & water - or vegetable broth
- Salt & black pepper - to season

🧾 Substitutions
Here are a few tweaks you can make to this recipe.
- Celery - instead of fennel, if you don't have or don't like fennel
- Parsley - fresh or dried parsley (or other fresh herbs) instead of dill
- Nutritional yeast - also called nooch, can be added for a cheesy flavour and to add some vitamin B12

👩🏻🍳 My soup maker
Just in case you're interested, I have the Morphy Richards Clarity Soup Maker and I highly recommend it.
It's like a big kettle and just as easy to use.
I also love the clear jug so I can watch it work, I know I'm sad that way.
I've used it a lot and the jug has stayed perfect, I'll give you some tips in a minute.

💭 Soup Maker FAQ
Here are a few tips to help you get the best results from your soup maker and keep the jug in good condition.
1. Only fill it to the maximum line on the glass or it won't work and you'll get an error code.
2. Mark the maximum line on the jug with a whiteboard marker, so it's easy to see while filling it with the soup ingredients.
3. Don't use a lot of turmeric or curry powder as it can stain the jug.
4. Wash as soon as you're finished using it, this will keep the jug in its best condition too, if you leave it to sit, the jug can stain.
5. Once you've used the self-clean function, dip a washing sponge or cloth in the hot soapy water to wipe the outside and around the rim on the inside of the jug, then rinse out well and dry. Just remember the water will be hot!
6. Do not use the rough side of a dishwashing sponge or a scourer as it could scratch the jug
These tips will help your jug stay in tip-top condition.

Here are a few things you can serve on the side with your cosy soup.

- Oat cakes or crackers - try these easy paprika crackers
- Crusty bread - or sourdough bread
- A few tortilla chips - for crunch
- Or a sandwich - or toastie
🥛 Soup toppings
Here are a few topping ideas for your cool weather soup.
- Vegan parmesan cheese - try this garlic and herb homemade vegan parmesan
- Plant-based cream - or yogurt
- Fresh herbs - or a sprinkle of dried herbs
- Croutons - little crunchy cubes of toasted bread
🌡️ Storing soup maker soup
As soon as the soup is made, pour it into airtight containers and leave it out with the lids off to cool, while you clean your soup maker.
Once it's cool, add the lids tightly and store in the fridge for 4-5 days, then reheat before serving.
Once cool, you can also portion the soup in dated and labelled freezer soup bags or tubs and freeze for 3-4 months.
Take a portion out of the freezer and leave in the fridge overnight to defrost, then reheat to serve.

Vegan Soup Maker - Easy Cauliflower & Fennel Soup
Equipment
- 1 Soup Maker
Ingredients
- ½ large cauliflower (cut into florets)
- ½ medium fennel bulb (cut into chunks)
- 1 large garlic clove
- 1 teaspoon ground cumin
- 1 teaspoon dried dill (or fresh dill)

- 5 tablespoons vegan cream
