    Vegan Soup Maker - Harissa Sweet Potato Soup Recipe

    A super quick and delicious harissa sweet potato soup with peanut butter made in a soup maker for a quick lunch or dinner.

    Sweet Potato Soup with Harissa.

    I'm back with another fabulously nutritious and tasty soup maker soup. Today it's a creamy harissa sweet potato soup with peanut butter.

    I can't decide if it's Moroccan because of the sweet potatoes and harissa paste or West African because of the peanut butter, which they often add to soups (they call it groundnut soup or peanut soup).

    Whatever the influences, this soup is smooth, gently spiced, and very tasty with a nutty finish from the nut butter.

    💭 Don't have a soup maker?

    If you don't have a soup maker.

    • Saute the onion and garlic in a little olive oil in a soup pot (or large pot) until soft.
    • Add the other ingredients and stock.
    • Bring to a boil, reduce to a simmer and cook gently for 30 minutes.
    • Season and blend with a stick blender (immersion blender) until smooth.

    📋 What you need to make Harissa Sweet Potato Soup

    Here are the simple ingredients you need to make this Moroccan sweet potato soup.

    .Sweet Potato & Peanut Butter Soup.
    • Sweet potato - some people call them yams but they are actually a different vegetable
    • Onion - white onion or red onion
    • Garlic - you can add extra if you like
    • Harissa paste
    • Paprika - I use a mild paprika, but you can use a hot paprika if you prefer
    • Peanut butter - if you have a nut allergy but are ok with seeds try sun butter instead (made with sunflower seeds)
    • Vegetable stock cubes & water - or vegetable stock
    • Oat milk - or your regular milk (you could even add coconut milk)
    • Salt & black pepper - to season

    💭 Harissa FAQ

    If you can, use harissa paste, but if you find it impossible to get hold of, here are a few ideas of what you can use instead.

    Harissa Paste.
    What can you use instead of harissa paste?

    Try substituting harissa with:

    1. Red pesto - it doesn't have any heat, but lots of flavour (make sure it's dairy-free for a vegan or plant-based diet)
    2. Chipotle paste - has a smoky flavour and a little heat
    3. Gochujang paste - a Korean spice paste with a sweet and spicy flavour and a bit of heat (comes in different heat levels)
    4. Berbere - an Ethiopian spice blend with a similar profile to harissa
    5. Red pepper paste - lots of flavour and a bit of sweetness, but no heat
    6. Sriracha - peppery and hot

    In the UK, it's easy to find harissa paste in supermarkets, health food shops or in your local deli.

    Vegan Harissa Sweet Potato Soup.

    🌡️ Storing soup maker soup

    As soon as your soup is ready, serve it or pour it into a tub to cool.

    Once cool, add the lid to your airtight container and store the soup in the fridge for 3-4 days.

    Reheat before serving.

    You can also freeze the soup in portions in a labelled and dated freezer bag or freezer-safe container.

    Leave in the fridge overnight to defrost (or use the defrost setting on a microwave), then reheat to serve.

    You can freeze the soup for up to 4 months.

    🍞 Homemade breads to serve with soup

    Here are a few homemade breads and bread hacks, you can serve with your homemade soup.

    • Basic wholemeal bread - this is a traditional bread made with yeast and kneaded
    • Cheese & chive beer bread - no knead and no yeast bread (it's like magic!)
    • Chickpea farinata - with rosemary and olives (a soft and easy flatbread made with chickpea flour, which is also known as gram flour)
    • Quick air fryer garlic bread - you can make it in the oven too, it just takes a little longer
    • Sundried tomato bread - a bread maker recipe

    Of course, any bread is good for dunking (particularly crusty bread), but there is something special about homemade bread.

    ⭐ Choosing a soup maker

    If you don't have a soup maker, I would say to buy one to match your budget.

    Morphy Richards Clarity Soup Maker

    They are all very similar, so unless there is something particular you are looking for, just look around for bargains.

    You can often find soup makers on sale if you search online, or you could find a second-hand one in a charity shop.

    In case you are interested, I have a Morphy Richards Clarity Soup Maker, which is like a clear kettle.

    It's super easy to use (smooth, chunky, and clean are the only options) and has a self-clean option, which I love.

    But always wash your soup maker as soon as you've made your soup and decanted it into a tub.

    This will prevent staining of the jug and keep it in tip-top condition.

    • 1 large sweet potato (peeled and cut into slices)
    • 2 large carrots (peeled and cut into thick slices)
    • 1 onion (peeled and quartered)
    • 2 large cloves garlic (peeled, more if you like)
    • 2 teaspoons harissa paste (see notes for substitutes)
    • ½ teaspoon paprika
    • 1 tablespoon peanut butter (or sun butter if you have a nut allergy, but are o with seeds)
    • 2 vegetable stock cubes
    • 200 ml oat milk (or your regular milk)
    • 400 ml water
    • 1 pinch salt and black pepper (to season)

    • Serve (I like to serve with a swirl of dairy-free cream) and enjoy!

    Notes

    • Can't find harissa paste try Red pesto, Chipotle paste, Gochujang paste, Berbere,  Red pepper paste or Sriracha instead.
    • This soup makes 2-3 servings.
    • Store in the fridge - Once cool, store in the fridge for 3-4 days.
    • Freeze soup - for up to 4 months
