    Easy roasted red pepper soup made in a soup maker with jarred roast peppers. A quick soup that's packed with flavour.

    This gorgeous roasted red pepper soup is super quick and easy to make. It's perfect for soup season!

    Rather than roasting fresh bell peppers in the oven, you just need to scoop some ready-roasted red peppers from a jar along with a few other ingredients and let the soup maker do its stuff.

    A soup maker is such a handy gadget when you are short of time or don't have the energy to spend 15 minutes chopping veg.

    Vegan Soup Maker Roasted Red Pepper Soup.

    Yes, you can make soup in a pot and I do regularly, but my soup maker still gets used quite a lot.

    Sometimes I whizz up some soup in my soup maker while cooking dinner, then it's ready for the next day.

    So easy and it only takes a couple of minutes to dump all the ingredients in the soup maker and hit start and of course, it doesn't take room up on the cooker top (stove top), where you are cooking other things.

    It's also good if you are very tired or not feeling well, as it doesn't require much effort and less washing up.

    If you are being careful with your money, check charity shops, supermarkets and sales for bargains.

    They all pretty much do the same job.

    Another good thing about making soup in the soup maker is it is generally fat-free.

    When cooking soup in a large saucepan or soup pot, you usually start by sauteeing the onion and garlic in olive oil. but as you skip this step with a soup maker, it means your soups are fat-free and lower in calories.

    • Chopped tomatoes - tinned are fine
    • Tomato puree - tomato paste
    • Balsamic vinegar - or a dash or white wine vinegar or cider vinegar
    • Vegetable stock cubes & water- or make-up vegetable stock (vegetable broth)
    • Onion - white onion, brown onion or red onion
    • Celery - for extra flavour
    • Garlic - add extra if you like
    • Paprika - for flavour
    • Fresh basil - or dried basil
    • Salt & black pepper - to season

    Here are some easy tweaks you can make to change up this easy recipe for homemade soup that's perfect for chilly days.

    🌡️ Cool that soup!

    Before storing your homemade soup, you need to cool it.

    Putting hot or warm soup in the fridge or freezer will lower the temperature, which can spoil other food.

    Pour it into an airtight container, with the lid off to cool quicker, then once cool add the lid securely and either chill in the fridge for 3-4 days or freeze for 3-4 months.

    Remember to label and date the tub first, if you are freezing the soup. I pop a label on the base of the tub, where it looks less messy, but you can still check it.

    • 1 Soup Maker (check your soup maker guidelines as they do differ)

    Ingredients
     
     

    • 1 small red onion (peeled and halved)
    • 1 stalk celery cut in four pieces
    • 2 cloves garlic
    • 3 roasted red peppers
    • 400 g chopped tomatoes (tinned/canned)
    • 2 tablespoons tomato puree
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon paprika (use ½ teaspoon if you don't want the flavour too smoky)
    • 1 teaspoon dried basil (or fresh basil or other fresh herbs)
    • 2 vegetable stock cubes
    • 1 pinch salt and black pepper
    • 250 ml water
    • 1 teaspoon vegan cream, to serve (optional)

    • Add onion, garlic and celery to your soup maker jug.
    • Then add roasted peppers and chopped tomatoes.
    • Add tomato puree, vinegar, herbs, spices, salt & pepper.
    • Finally, add stock cubes and water.
    • Pop on the lid and set your soup maker to smooth then press start.
    • My soup maker takes 21 minutes, but yours may be different.
    • I like to serve mine with a swirl of cream, as it's quite a rich soup.
    • Enjoy!

    Notes

    • If you are making this soup in a pot, saute finely chopped onion, celery and garlic in a little olive oil until soft before adding the chopped red peppers and tomatoes. Then add the tomato puree, herbs, spices, salt and pepper. Make the stock up by adding boiling water (same quantity) to the stock cubes, cook 20 minutes, then blend.
    • Remember to wash your soup maker out quickly after you make the soup so it doesn't stain.
    • Chill soup in the fridge for 3-4 days then reheat to serve.
    • Freeze soup for 3-4 months, defrost and reheat to serve.
