EASY GREEK SALAD DRESSING (SMALL BATCH)
I never buy bottled salad dressing as it's so easy and quick to make, like this Easy Greek Salad Dressing.
It's super quick to make and tastes fab, with all those summery Greek flavours.
It's got a lovely zing from the lemon and vinegar.
Whip a batch up and keep it in the fridge until you need it.
The flavours just get better.
JAM JAR SALAD DRESSING
If I'm just making enough dressing for two salads (my son won't try salad dressing), I make it up in a small glass and mix it with a fork.
I know, classy right?
If I'm making enough for a few salads, I'll make it in a old, clean jam jar and keep it in the fridge until I'm ready to use it.
So next time you finish a jar of jam, mayo or pickle, wash that jar, remove the label and set it aside for your salad dressing.
HOW TO MAKE A GOOD SALAD DRESSING
A good salad dressing should always start with the basics of oil and vinegar.
After that, you can play about adding different flavours.
Depending on what you add the dressing can be a vinaigrette style dressing or a creamy dressing.
SALAD DRESSING TIPS
- The vinegar can be exchanged for other acidic ingredients like lemon juice or lime juice.
- Sometimes a salad dressing will have both vinegar and an acidic fruit juice.
- If you are adding a sweeter fruit juice like orange or mango, then I would suggest adding vinegar too for zing.
- Adding fruity zest adds even more flavour.
- To make a dressing creamy, you can mix in vegan plain yoghurt, vegan creme fraiche or vegan cream.
- You can also add dried or fresh herbs.
- Some people love crushed garlic in a dressing, but it's not for everyone.
- Add chilli flakes to give a bit of heat.
- Always remember to season your salad dressing with salt and pepper.
- Before you drizzle the dressing, have a taste to make sure you have the right balance of flavours.
WHAT YOU NEED TO MAKE GREEK SALAD DRESSING
You don't need any fancy ingredients to make a good Greek Salad Dressing.
I added fresh parsley this time, but I usually just use dried oregano, so add it if you like.
- Olive oil
- Lemon juice
- White wine vinegar
- Wholegrain mustard
- Dried oregano
- Fresh parsley (optional)
- Salt & pepper
HOW LONG WILL SALAD DRESSING KEEP?
Keep fresh salad dressing in the fridge for 1-2 weeks.
Store it in a tightly sealed jam jar, glass bottle with a lid or an airtight container.
Just take it out every time you need to dress a meal.

Here are some ideas for using salad dressing:
- Drizzled over a salad
- Mixed through couscous
- Drizzled in a salad wrap

- As a dressing for potato salad instead of mayonnaise
- Drizzled over roast vegetables
- Mix with plain yoghurt to make a dip for crisps (chips) or crunchy salad

Easy Greek Salad Dressing

Ingredients
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar can be swapped with a different vinegar
- 1 tsp wholegrain mustard you can use your favourite mustard
- 1 tsp dried oregano
- handful fresh parsley optional
- salt and pepper to taste
Instructions
- Add all the ingredients to a clean jam jar and shake well to mix.
- If you don't have a jam jar you can whisk in a jug or bowl or shake in a small airtight container.
- Taste to check the balance of flavours and seasoning.
- Enjoy!
Notes
- This salad dressing may be kept in the fridge for 1-2 weeks.
- It will keep for longer without fresh parsley.
