That was the inspiration for this vegan Bombay cheese sandwich with chutney.

π₯ͺ Famous masala sandwich
The most famous Bombay sandwich is a masala sandwich.
It's a bit different from my creation.
A masala sandwich is a popular fast food option sold by street vendors in India.
Mashed potato is mixed with spices, chutney, and sev.
Sev is a small crunchy noodle with Indian spices, a bit like a finer version of the Bombay mix I use in this sandwich.

So the original sandwich does have the same soft filling, chutney, and crunch as my Bombay sandwich, but it is quite different.
π Bombay Mix FAQ
Bombay mix is a spiced snack mix from India with dried ingredients and spices. It's a salty, crunchy snack served with fizzy juice or beer.
You will find it in the world food aisle of your local supermarket or in Indian supermarkets.
Each brand of Bombay mixture varies a little, but generally, they include spiced, crunchy puffed rice, chickpeas, noodles, fried onion, fried lentils and nuts.
Delicious and very addictive.
Bombay is the original name for the city of Mumbai, on the west coast of India.
Bombay was renamed Mumbai in 1995 as the original name was seen as a symbol of British colonialism.
The new name comes fom the name of the Goddess of fishermen called Mumbadevi.
π₯ͺ What you need to make this Bombay sandwich recipe
Here are the simple ingredients you need to make this rather fabulous tribute to an Indian sandwich.
- Wholemeal bread - you could use a soft white bread if you prefer
- Vegan cheddar - we've been trying the new vegan Cathedral City cheddar this week and we're impressed with it
- Mayo - vegan of course
- Salad leaves - or crisp lettuce
- Mango chutney - mild or spicy (try making your own with this easy recipe for hot mango chutney)
- Bombay mix

π Variations
Here are a few swaps and extras for your Bombay veg sandwich.
- Toast it - add it to a grill to toast the bread and melt the cheese
- Herbs - add fresh coriander (cilantro) to the mayo
- Carrots - add grated carrot to the cheese mix
- Red pepper - add finely sliced red pepper to the cheese mix
- Indian green chutney - add green Indian chutney or chilli garlic chutney instead of mango chutney

I use mango chutney in this, but you could use a British-style pickle instead if that is all you have or a tomato or onion chutney.
Not as authentic with Indian flavours, but it would still work.
Better still choose another type of Indian chutney.

Chutney is often served with Indian snacks and sandwiches.
The most popular chutney to add to Indian sandwiches are chutneys made with fresh herbs like coriander and mint.
Try this green chutney made with mint and coriander (cilantro).

Here are a few serving ideas for your Indian sandwich.
- Apple - sweet apple wedges
- Coronation slaw - a curried coleslaw
- Dill potato salad - the most delicious potato salad

This sandwich is best made fresh.
If you must make it the night before, skip the Bombay mix and add it just before you tuck in to your sandwich.
If you put the Bombay snack mix in ahead of time, it will lose it's crunch.

Step 1
- Grate your cheese and add the mayo. No need to season as there are already a lot of strong flavours in this sandwich.
- Mix well.
Step 2
- Spread both slices of bread generously with mango chutney.
- Add a layer of the cheese mixture then top with salad leaves. You can add tomato and cucumber too if you like.
Step 3
- Top with a layer of Bombay mix (as little or as much as you like.
- Cut in half and serve.
- Enjoy!

Vegan Bombay Cheese Sandwich with Chutney
Ingredients
- 4 slices wholemeal bread
- 120 g vegan cheddar (grated)
- 3 tablespoons vegan mayo
- 2 haldfuls salad leaves
- 4 tablespoons mango chutney
- 4 tablespoons Bombay mix (as little or as much as you like)
Instructions
- Mix the grated cheddar with mayo until well combined.
- Spread each slice of bread with mango chutney.
- Now to build your sandwich. First add your cheese mixture to both your sandwiches and spread evenly.
- Top with salad leaves (and tomato or cucumber too if you like), then top with Bombay mix.
- Top with your other slice of bread, cut in half and enjoy!
