- Mustard - I like to use wholegrain mustard for this citrusy dressing, but you could use dijon mustard or American yellow mustard; of course, it will change the colour of this salad dressing
- Parsley - the fresh parsley is optional; you could add dried parsley instead
- White wine vinegar - you could use apple cider vinegar instead

Easy Greek Salad Dressing
Ingredients
- 3 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar can be swapped with a different vinegar
- 1 teaspoon wholegrain mustard you can use your favourite mustard
- 1 teaspoon dried oregano
- handful fresh parsley optional
- salt and pepper to taste
Instructions
- Add all the ingredients to a clean jam jar and shake well to mix.
- If you don't have a jam jar you can whisk in a jug or bowl or shake in a small airtight container.
- Taste to check the balance of flavours and seasoning.
- Enjoy!
Notes
- This salad dressing may be kept in the fridge for 1-2 weeks.
- It will keep for longer without fresh parsley.
