👩🏻🍳 Copycat Recipe - Slug & Lettuce Plant Power Sandwich
This gorgeous lunch wrap is based on the plant power sandwich they serve in the pub chain Slug and Lettuce, which can also be ordered as a wrap.
Vegan lunches in pubs can be limited, usually a pretty bog standard vegan burger is one of the few options, but the Slug and Lettuce offers a plant power sandwich or wrap.
Happily, I ordered this vegan wrap of deliciousness and enjoyed it so much that I kept thinking about it.
I don't think it would be nearly as good as a sandwich.
Anyway, I knew I had to make it myself at home, or something very similar.
🥗 A healthier lunch option
This wrap is full of veggies and healthy ingredients so it's a good option for lunch.
The avocado is full of healthy fats, the hummus is packed with protein and there are vitamins and minerals in the rest of the vegetables, salad and dressing.
🌯 What's in an avocado and hummus wrap?
The original plant power wrap (or sandwich) is made with creamy avocado, red pepper & sesame hummus, slow-roasted tomatoes, sweet and sour pickled onion, cucumber ribbons, miso mayo and rocket.
I simplified this avocado and hummus wrap and used what I had for a similar flavour profile.
Here's are the simple ingredients you need to make my version of these hummus veggie wraps for the perfect lunch.
- Large flour tortillas - I used plain, but you could use your wrap of choice, like whole wheat wraps or flavoured wraps like spinach wraps or Mediterranean wraps
- Mashed avocado
- Lemon juice
- Salt & black pepper
- Hummus - homemade hummus or use store-bought hummus
- Sundried tomatoes
- Cucumber
- Pickled cabbage - quick homemade pickled cabbage or shop-bought pickled cabbage
- Salad leaves
- Tahini dressing - included in the recipe

📖 Substitutions
Here are a few tweaks you can make to these veggie hummus wraps to change it up.
- Rocket - instead of salad leaves add rocket (also called arugula) for a more authentic flavour
- Pickled red onions - make a batch of easy pickled red onions to add to your wraps (great on sandwiches, burgers and hot dogs too)
- Miso Mayo - mix some miso into some vegan mayo and drizzle over the wrap fillings instead of tahini dressing
- Thousand Island dressing - works well drizzled In this wrap

🥑 Be careful removing the stone from an avocado
Please don't use a knife to remove the stone from your ripe avocado, it's such a dangerous thing do do and so many people cut themselves doing just that.
There's a much easier way to remove the stone.
A safe way to remove an avocado stone
- Cut the avocado with a knife in half, working around the stone
- Then twist the avocado to divide in half
- Take the half with stone and push the avocado stone out from behind with your thumbs, it will pop out easily if the avocado is ripe
- Now you can scoop out the avocado flesh with a large spoon, then use a knife for avocado slices or a fork to mash your avocado
🧂 Season your mashed avocado
Always season your smashed avocado with salt and black pepper, which will really enhance the flavour.
If you aren't serving it straight away, I would also add a little lemon juice, which will help prevent the avocado mash from browning.
It will also perk up the flavour.
♨️ Grill that wrap?
If you like you can grill your avocado hummus wraps for a crispy finish.
I prefer the tortilla wrap soft and squidgy, but you could grill it in a panini machine, in an air fryer, under a grill (broiler).
I will leave that up to you.
🥣 Dressing is a must in a wrap
You might notice if you buy a wrap in a sandwich shop or at a cafe, that they add a dressing to your wrap.
People often miss this step but it really elevates the flavours to a whole new level.
I really recommend adding dressing to these avocdo hummus wraps and any other lunch wraps you make.
You can make a small batch of homemade salad dressing (try one of these: vegan ranch dressing; creamy Italian dressing; Russian dressing or Greek salad dressing) or just drizzle on some ready-made salad dressing.
Once you add that dressing, you will see how much difference it makes.
For these easy hummus wraps with avocado I made an easy pink dressing flavoured with tahini and the vinegar from the pickled cabbage, which turned it a gorgeous pink colour.
🥄 Flavoured oil and vinegar
Oil and vinegar is the basis of most salad dressings, but you can get creative.
If you are making a wrap, salad or sandwich which includes some anti pasti like sundried tomatoes, chargrilled vegetables or artichokes in oil, use some of that flavoured oil in the wrap dressing.
Adding pickled cabbage, pickled beetroot or pickled gherkins?
Use some of the flavoured vinegar in your dressing.
It's a frugal way of doing things and adds a lot more flavour.
💭 Top tip
Don't add to much dressing to your hummus avocado wrap (or any lunch wrap for that matter).
It adds a lot of flavour, but you just need a drizzle.
Add too much and it will get very messy.
Just a little is enough and have a napkin just in case.
🌯 Can you make this wrap ahead?
These tasty wraps are quick to make for an easy lunch that will tingle your taste buds, but as they contain dressing, they are best freshly made.
If you want to speed things up and prep ahead, make the dressing ahead and chop your cucumber and sundried tomatoes and keep them in the fridge in an airtight container.
You could also mash the avocado ahead of time, but make sure you add a little lemon juice to help prevent it from browning.

Easy Vegan Avocado & Hummus Vegetable Lunch Wraps
Ingredients
- 2 large flour tortillas
- 1 ripe avocado
- ½ teaspoon lemon juice
- 1 pinch salt and pepper
- 3 tablespoons hummus (more if you like)
- ¼ large cucumber (sliced)
- 8 sundried tomatoes (cut into smaller pieces with a knife or scissors)
- 4 tablespoons pickled cabbage (or 4 forkfuls, drained on kitchen paper)
- 2 generous handfuls salad leaves
Wrap dressing
- 3 teaspoons vegan mayo
- 2 teaspoons vinegar (I used the vinegar from the pickled cabbage, but any vinegar will do)
- 1 teaspoon tahini
- ½ teaspoon maple syrup
- 1 pinch salt and pepper
Instructions
- First, make up your dressing. Add the ingredients to a small bowl and whisk with a fork. You can add just a little water if you prefer it thinner, but only about ½ teaspoon of water. Set aside.
- Cut your cucumber and sundried tomatoes, ready to make your wrap and mash your avocado with lemon juice, salt and pepper.
- Add your first wrap to a cutting board and dollop half the avocado and half the hummus side by side in the centre of the wrap.
- Top with half the tomato and cucumber, then add half the pickled cabbage.
- Drizzle over some dressing, then add the salad leaves and wrap.
- To wrap, partially fold in the sides of the wrap over the filling and pull the bottom of the wrap over the filling, using it to pull the filling in towards you, so it's firmly packed, then tuck in the sides as you roll and cut in half.
- Do the same for the second wrap and serve it with salad and a few crisps for lunch orwith potato wedges and salad for a light dinner.
- Enjoy!
Notes
- You can use homemade or shop-bought dressing.
- If you don't have pickled cabbage, pickled beetroot or gherkins would be good instead.
- Don't add too much dressing or it will get messy.
- Make the wrap fresh if you can.
