Vegan Cheese & Chive Beer Bread (no knead, no yeast recipe)

 An easy, vegan cheese beer bread with chives. It's super quick to make with no yeast, no kneading and you can use plain (all-purpose) or self-raising flour.

VEGAN CHEESE & CHIVE BEER BREAD (no knead, no yeast recipe)

Beer bread has to be the easiest bread to make and the quickest to prepare.

This simple beer bread is flavoured with cheese and chives.

It's a rustic loaf with a good crust.

Well worth a try and a good place to start if you haven't made bread before.

You'll have fun and be amazed at how easy it is.

It always feels a bit like magic to me.

DO YOU NEED ANY SPECIAL EQUIPMENT TO MAKE VEGAN CHEESE BREAD?

Nope. You don't need any special equipment, it's a very basic recipe.

All you need is a bowl to mix the dough in and a loaf tin to bake it in.

That's it!

Nothing fancy at all.

I use a 2 lb (900g) loaf tin.

They vary a little in length and depth, but there's no need to worry.

WHY DON'T YOU NEED YEAST TO MAKE VEGAN CHEESE BEER BREAD?

I'd love to say it's the beer that replaces the yeast, but in all honesty, it's the raising agent.

Modern beer doesn't generally have enough yeast to give your bread rise.

Some have more than others, if you look at a craft beer, they have a lot more yeast in them, but you still need that raising agent. 

The raising agent is baking powder.

If you are using self-raising flour instead of plain, it's good to add a little extra baking powder to the mixture.

It's true self-raising flour has some in the flour, but not as much as we would add, so add a generous pinch to your self-raising flour.

WHY DON'T YOU KNEAD BEER BREAD?

When you're making a dough with yeast, you knead the dough to build structure and gluten in the dough to help with the texture and rise.

In a beer bread the small amount of yeast in the beer, reacts with the sugar you add. 

This along with the raising agent and the bubbles from the beer help with the rise and the texture.

It really is a bit of alchemy.

ADDING CHEESE FLAVOUR TO A VEGAN BREAD

 
 
To add the cheesy flavour to this bread I use vegan parmesan and nutritional yeast.
 
If you don't have or can't get hold of vegan parmesan, you can use vegan cheddar instead, although it won't add as much flavour.
 
The nutritional yeast, also known as nooch also adds to the cheese flavour.
 
Another great reason for adding it is it is supplemented with Vitamin B12, which is important to include in your diet as it helps keep the body's nerves and blood cells healthy.
 
It's also good in preventing anemia, which can make you very tired and lacking in energy.

You can also use some of the nooch to make a sublime roasted potato seasoning, which is also good sprinkled on the dough before you bake it.

DON'T OVERMIX YOUR BEER BREAD DOUGH!

It's important you don't overmix your beer bread dough.

If you do, it will be heavy and dense.

Just pour the beer in and fold to mix until nearly all the flour is combined.

Don't worry if there are little patches of flour, it's more important not to over mix it.

WHAT YOU NEED TO MAKE CHEESE & CHIVE BEER BREAD

You only need a few simple ingredients to make cheese & chive beer bread.

  • PLAIN FLOUR - also known as all-purpose flour
  • BAKING POWDER - as the raising agent
  • SUGAR - caster sugar, although you could use whatever you have
  • SALT - for flavour
  • VEGAN PARMESAN - or vegan cheddar
  • NUTRITIONAL YEAST - also known as nooch
  • DRIED CHIVES - dried are better than fresh herbs in bread unless you are using a woody herb like thyme.
  • BEER - or lager
 

HOW TO SERVE BEER BREAD

 
 
Beer bread is rustic bread, so it's not the one I'd choose for sandwiches. Here are a few ideas for serving it.
 
  1. SOUP - it's the perfect bread to serve with soup. Try my easy vegan broccoli and pea soup or my vegan tomato soup made with tinned tomatoes. 
  2. BUTTERED - it's great slathered with vegan butter or spread.
  3. TOASTED - it's really good toasted
  4. PATE - try serving it toasted with a mushroom pate or a spicy bean pate.
  5. HUMMUS - it's good plain or toasted with hummus. 
  6. CHEESE & CHUTNEY - buttered and topped with vegan cheese and chutney or pickle.
  7. CREAM CHEESE - top with vegan cream cheese and slices of cucumber

HOW TO MAKE VEGAN CHEESE & CHIVE BEER BREAD

STEP 1

 
 
Add the flour and baking powder to a mixing bowl.
 
Next, add the vegan parmesan and mix.

Now add the nutritional yeast and the dried chives.
 
These will add so much flavour.

Add sugar and salt to the mixture and mix well.

Pour the beer over the dry ingredients and fold in.
 
That's it, that's your bread dough ready, simple as that.

Pour the bread dough into the loaf tin and top with a sprinkling of flour.
 
The flour gives it a nice finish.

Bake until golden and when you knock on the base with your knuckles it sounds hollow.
 
Leave to cool, then serve and enjoy!

Ingredients
 
 

  • 375 g self-raising flour
  • 4 tablespoon nutritional yeast
  • 4 tablespoon vegan parmesan grated
  • 1 tablespoon dried chives
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • a good grinding of black pepper
  • 330 ml 1 ½ cups beer

Instructions
 

  • Preheat your oven to 190c/170c fan/375f/gas mark 5.
  • Grease a 2 lb / 900g loaf tin.
  • Add the flour, sugar, cheese, yeast, chives, salt and pepper to a mixing bowl and mix well.
  • Pour the beer into the dried ingredients and fold in until just combined. Try not to over mix.
  • Bake in your pre-heated oven for 45 minutes.
  • Remove from the tin. 
  • Turn the loaf upside down and tap the bottom, if it sounds hollow it is ready, if not pop it in for a little longer.
  • Cool on a baking rack, then slice and serve.
  • Enjoy!

Notes

  • If you don't have self-raising flour, you can use plain flour and 1 tablespoon of baking powder as the raising agent.
  • You can just use parmesan or nutritional yeast if you don't have one or the other.
  • Beer bread is best served on the day it is made, but you can toast it the next day.

    Which kind of beer do you find works best? Lager? Porter?

      So sorry John, just spotted your comment. You could use either, but a porter if going to have a much stronger flavour that could overpower the other flavours.
