Here are the simple ingredients you need to make this fresh salad lunch wrap with the flavours of Greece.

  • Mayo - It's not traditional, but adding some garlic to mayo adds even more flavour
  • Olives - green or black olives both work in this wrap, but if you don't like olives, try adding sundried tomatoes instead, but dry them on kitchen roll (kitchen paper) before adding

Step 1 - Make your Greek Dressing (you can use shop-bought dressing, but this one is easy and quick to make. Then spread mayo on a large flour tortilla.

Jac's Top Tip

💭 Don't overfill your wrap

It's tempting to pile as much salad as possible into your wrap, but unless you're an expert at wrapping them, it's going to be messy. Leave space around your filling and wrap firmly. Also, go easy on the dressing, especially if you are making the wrap ahead. A teaspoon is enough.

💭 Preventing the tortilla wrap from ripping

If your tortilla seems dry or not soft (especially if the packet was already open), it will tear when you add filling and fold it. To prevent it from tearing, warm the tortilla in the microwave for a few minutes, which will soften it.

💭 Can I Make this Wrap Ahead?

This Greek wrap is best eaten fresh, but you can make it the night before. Wrap it tightly in baking paper or sandwich wrap and pop it in the fridge overnight.

For the best texture, keep the added dressing to a minimum, and if the wrap can be freshly made, even better.

Why not cut the ingredients and have them and the dressing stored in the fridge, ready for you to make your salad wrap in the morning or at lunchtime?

💭 How to stop the wrap getting soggy

The trick is to create a barrier between the tortilla and the wetter ingredients. Spread the tortilla with vegan mayo, then add a layer of salad leaves before adding the tomatoes, olives, cheese and dressing.

Also:

  • Don't add too much dressing
  • Use firm, but ripe tomatoes
  • Drain the olives well
  • Don't make the wrap too far ahead
  • Wrap it tightly and keep it chilled

👩🏻‍🍳 WHat can I Serve with a Greek Salad Wrap?

I mean it's fine for a light lunch as it is, but if you are serving it as a bigger meal, try adding:

  • A side salad
  • Crisps (chips) or try these Paprika Tortilla Chips
  • Hummus and crunchy vegetable sticks
  • Vegan Coleslaw
  • Dairy-Free Potato Salad

For lunchboxes, keep it simple and add fruit and a sweet treat, like these Biscoff Oat Bars.

Is a Greek Salad Wrap vegan?

A traditional Greek salad wrap includes dairy-based feta, so it isn't suitable for vegans, but this plant-based Greek wrap contains plant-based feta cheese, so it's suitable.

Which dressing is good in this wrap?

The Greek Dressing I suggested is perfect in this wrap, but you could try this Creamy Vegan Feta Dressing or Vegan Ranch Dressing instead.

Can I add chickpeas to this wrap?

Yes, chickpeas would make a good addition, and they are full of plant-based protein and fibre. Drained (and patted dry) canned chickpeas are fine.

Vegan Greek Salad Lunch Wrap

A tasty vegan lunch wrap filled with Greek salad and a delicious Greek Salad Dressing.

Ingredients
 
 

  • 1 large flour tortilla
  • 2 teaspoons vegan mayo
  • handful salad leaves
  • 4 slices cucumber halved
  • 4 cherry tomatoes halved
  • 5 black pitted olives
  • 25 g vegan feta, cubed
  • 1 - 2 teaspoons Greek salad dressing
  • pinch black pepper

Instructions
 

Keep screen on
  • Lay the flour tortilla on a flat surface and spread with mayo.
  • Add the salad leaves to the top half of the wrap, leaving a space around the edge and top with cucumber.
  • Add cherry tomatoes, black olives and cubes of feta.
  • Season with black pepper and drizzle 1 to 2 teaspoons of the dressing over the wrap filling.
  • Fold the sides of the tortilla partially over the salad filling, then fold the bottom of the tortilla firmly over the filling and tucked in sides, then and roll away from you, tucking in as you go.
  • Cut in half and serve.
  • Enjoy!

Notes

  • You can easily scale this recipe up to make more wraps, which could take a little longer.
  • If you're making it for later, wrap firmly in kitchen foil, parchment paper or reusable sandwich wrap.
  • This wrap is best eaten on the day it is made, but you can make it the night before and store it in the fridge until the next day.

    This is my kind of lunch! Easy and full of freshness. Really appreciate the folding the wrap diagrams as I often forget how to do it but at least my kids find my attempts amusing! I am guilty of overfilling as well 🙂
